Retrobottega: the aesthetics of flavor and strong bonds with the earth

Retrobottega is located in Rome’s very center, between Piazza Navona and the Patheon, on Via della Stelletta. This is where chefs Giuseppe Lo Iudice – after his strong experiences at “Il Pagliaccio” and Milan’s Bulgari Hotel – and Alessandro Miocchi – who completed his apprenticeship under Enrico Crippa and Anthony Genovese – joined forces to create a very special culinary format.
The venue features a stern and minimalistic double counter, right next to the central kitchen. The restaurant’s austere design is focused on functionality and on top-quality service, in contrast with the intense and voluptuous dishes served. Food, of course, is the real protagonist.

The menu revolves around a tight bond with the earth and with seasons. Garden and wild herbs, for example, are picked by the Retrobottega team with an expert ethno-botanist in pristine areas of Abruzzo once a week. Spontaneous fruit, tubers, lichens and roots are also gathered in search of new flavors, and to spark a reflection on the ethics of cooking.

Retrobottega is a format based on simplicity and flavor. Just a few meters from the restaurant, Lo Iudice and Miocchi have extended this concept to a handmade pasta laboratory where they sell the queen of Italian cuisine – freshly made or bronze-cut and dried – as well as pasta sauces, tomato preserves, different oils and much more. Great souvenirs of the incredible flavor of a unique culinary experience.
